Olio D’Oliva Pizzeria is one of those places in Sofia that manages to transport you directly to Italy without leaving the city center. This is not just another pizzeria, but a project with a soul and a clear philosophy: high quality, authentic Italian products, and a family attitude towards food and guests.
The story -
"Olio D'Oliva"
The name “Olio D’Oliva” (olive oil) is not accidental: olive oil is the basis of Italian cuisine and symbolizes respect for the land and pure products.
The concept was developed by Carlo – an Italian living in Sofia, who wanted to create a place where:
- craftsmanship in the kitchen,
- slow, well-fermented dough,
- and 100% Italian products
meet in an authentic but unpretentious atmosphere.
Over time, the brand has grown, and today Olio D’Oliva has locations in other cities – Prague, Thessaloniki, and an opening is planned in Alicante.

The food – the heart of Olio D'Oliva
The dough and baking
Pizza is the star of the menu. Characteristic of Olio D’Oliva:
- The pizzas are baked at a high temperature (over 300° C).
- The dough has a long fermentation – the result is a light, airy, and aromatic crust.
- Semi-wholemeal flours are used.
The products
All key ingredients are imported from Italy:
- mozzarella and burrata;
- prosciutto (crudo and cotto);
- sausages, salami, speck, sausage;
- high-quality extra virgin olive oil from specific regions, including the Pontine region of Lazio.

All pizzas are standardly around 33 cm, with a clear dividing line between:
“Red” pizzas (with tomato sauce)
Some of the classics and specialties:
- Margherita
- Siciliana – with capers, olives, anchovies
- Diavola – spicy, with salami and chili
- Crudo – with prosciutto crudo
- Amatriciana – with bacon and pecorino
- Magma – a spicier, “fiery” version
- Parmigiana – with eggplant, inspired by Parmigiana di melanzane
“White” pizzas (without tomato sauce)
Here are the gourmet stars:
- Super Formaggi – with different types of cheeses (incl. blue cheese, Taleggio, etc.)
- Cotto Bosco – prosciutto cotto, Taleggio, mushrooms
- Porcini e Salsiccia – porcini mushrooms and Italian sausage
- Speck e Porcini – speck and porcini mushrooms
- Parmigiana Bianca – “white” interpretation of parmigiana
Pistacchio e Mortadella – one of the most interesting pizzas: with burrata, mortadella, and pistachio – a very typical modern Italian combination
Vegan and other options
There is also a vegan pizza – for example, Campagnola Vegan, with:
